Southwestern Breakfast Sandwich

Eggs contain no trans fats and little saturated fat. Its protein is the highest quality there is, containing all essential amino acids needed by our bodies. Eggs are also an excellent source of choline, lutein, and natural Vitamin D. Enjoy eggs in your diet in moderation.

Crunchy oat BreadIngredients:

  • 2 slices Aunt Millie’s Hearth Honey & Crunchy Oat Bread, toasted
  • 2 large eggs, scrambled
  • 2 avocado slices
  • 1 tablespoon sliced black olives
  • 2 tablespoons salsa

Yield: 1 sandwich

Directions:

  1. Heat nonstick skillet over medium heat; spray with no stick spray; add two beaten eggs and cook for about 30 seconds, stirring constantly with spatula, until eggs just begin to set.
  2. Add salsa and black olives and cook just until eggs are set.
  3. Place egg mixture on one slice of toasted Crunchy Oat bread.
  4. Top with 2 avocado slices and second slice of toasted bread.
