Oven Baked Chicken Salad Sandwich

Most people enjoy the taste of nuts but hesitate to eat them due to their high calorie and fat content. While they are high in fat, it is mostly the heart healthy monounsaturated fat. They also contain good amounts of protein, complex carbohydrates, vitamins, and minerals. Enjoy nuts in moderation as a part of your heart healthy diet.

Cinnamon BreadIngredients:

  • 2 slices Aunt Millie’s Whole Grain Cinnamon Swirl Bread
  • 2 ounces baked chicken breast, shredded
  • 2 tablespoons diced celery
  • 2 tablespoons sliced grapes
  • 1 tablespoon light mayonnaise
  • 1 tablespoon nonfat yogurt
  • 1 tablespoon chopped walnuts
  • 4 red leaf lettuce leaves

Yield: 1 sandwich

Directions:

  1. Combine chicken breast, celery, grapes, light mayonnaise, nonfat yogurt, and walnuts in a bowl and mix thoroughly.
  2. Place 4 lettuce leaves on one slice of Cinnamon bread.
  3. Top with chicken salad and second slice of bread.
