Cream Cheese Cupcakes

MuffinsIngredients:

  • 2 boxes Aunt Millie's Cake Muffins (your favorite variety)
  • 8 oz low fat cream cheese
  • 1/4 cup butter
  • 1 cup confectioner's sugar
  • 1/2 tsp vanilla extract
  • 6 strawberries

Yield: 12 Cupcakes

Directions:

  1. In a large mixing bowl, combine cream cheese, butter, and vanilla extract until smooth. Slowly add confectioner's sugar. Mix well and set aside.
  2. Open Aunt Millie's Cake Muffins from individual packaging and place on plate. Frost each muffin with cream cheese frosting.
  3. Cut off tops of washed strawberries, including any leafs, and slice verticaly. Carve an "m" contour on top of each slice creating a heart shape.
  4. Garnish each frosted cupcake with a heart-shaped strawberry placed on top at a 45 degree angle.
