Gourmet Grilled Cheese
Homestyle Buttermilk Bread


  • 8 slices Aunt Millie's Homestyle Country Buttermilk Bread
  • 1 Tbsp. olive oil
  • 2 medium white onions, sliced
  • 2 c. beef stock
  • 1/4 lb. gruyere cheese, sliced
  • 1/8 tsp. salt
  • 1/8 tps. pepper
  • 1/4 tsp. garlic powder
  • Fresh baby arugula

Yield: 4 Sandwiches


  1. Spread one side of each bread slice with butter. Set aside.
  2. Heat the olive oil in a medium saucepan over medium-high heat, add onions. As the onions begin to brown, add enough stock to cover the bottom of the pan. Allow the stock to evaporate almost completely, stirring to release any browned bits from the pan. Repeat this process until the stock is gone, and the onions are soft and deep brown. Set aside.
  3. Meanwhile, in another pan over medium-high heat, add some oil and mushrooms. Cook until soft and golden. Season with salt, pepper, and garlic powder. Set aside.
  4. Assemble the sandwich; Buttered bread, layer of cheese, layer of mushrooms and onions, handful of arugula, topped with another buttered bread slice.
  5. In a pan over medium heat, cook the sandwich until golden brown and cheese is totally melted.
