Grilled Eggplant Toast
12 Whole Grain Bread


  • 8 slices Aunt Millie's Best Grains 12 Whole Grain Bread
  • 4 Tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 medium eggplant, sliced crosswise
  • 4 Roma tomatoes, sliced
  • ½ lb. mozzarella, sliced
  • Fresh basil

Yield: 8 servings


  1. Preheat oven to 350 degrees.
  2. Brush bread slices with olive oil. Bake until lightly browned.
  3. Brush eggplant slices with olive oil. Sprinkle lightly with salt and pepper. Bake until brown and tender, about 8-10 minutes.
  4. Lay out the 8 slices of bread, and top each with eggplant, tomato, mozzarella, and basil. Broil 3 minutes, or until cheese is melted.
  5. Finish with additional sprinkle of salt.
