Pesto Tuna Melt
Light Oatmeal Bread


  • 8 slices Aunt Millie’s Healthy Goodness Light Oatmeal Bread, toasted
  • 2 cans chunk light tuna packed in water, drained (12 oz. can)
  • 4 Tbsp. low-fat mayonnaise
  • 4 Tbsp. pesto
  • ½ c. Parmesan cheese, grated
  • ½ tsp. garlic powder
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • 2 tomatoes, sliced
  • ½ cup shredded cheddar cheese

Yield: 12 servings


  1. Preheat broiler.
  2. Combine tuna, mayonnaise, pesto, parmesan cheese, garlic powder, salt, and pepper in a bowl.
  3. Spread tuna mixture on each slice of bread, and top with a tomato slice and 2 tbsp. cheddar cheese.
  4. Place on baking sheet and broil 3-5 minutes until bubbly and golden brown.
