medium cheddar cheese, grated or shredded

Memphis style dry rub
3/4 to 1 cup
mayo
1 pound
smoked sausage, sliced lengthwise into strips

Step 1
Combine sharp cheddar, medium cheddar, pimientos, mayo, and Memphis style dry rub in a bowl. Chill for 4 hours until creamy and spreadable.

Heat a skillet or grill over medium-high heat. Add sausage and cook until browned.

Spread pimiento cheese generously on one slice of bread. Place browned sausage on top and cover with second slice of bread.

Spread mayo on top of the sandwich and place mayo side down on skillet. Spread mayo on other slice. Flip and grill until both sides are golden and cheese has melted.
